Abstract
Fruit grading is a significant stage of fruit commercialization. It can increase the added value of fruit and enhance its market competitiveness. This paper first introduces fruit grading technologies' background and research status, then summarizes the fruit grading methods based on traditional digital image processing and deep learning. Additionally, the standard fruit datasets are collected and analyzed in this paper. Finally, the fruit grading technology is summarized and prospects.
